Any suggestions are appreciated. We will be there in August so I think reservations will be important. Thank you to those who pointed out St. Malo is not in Normandy!
We stayed at Hotel Nouveau Monde and had dinner there both nights. Both the food and service were excellent. The hotel is a few blocks outside the city walls and directly faces the beach, so the restaurant also has beautiful views of the bay.
Absolutely reserve in St. Malo -- there are many good restaurants and many terrible tourist places especially along the wall by the parking lot. We had excellent luck at Bistrot du Rocher and at l'Absinthe. I think the best fish we had in France was at Rocher which is a tiny place. Reserve.
Just to avoid any confusion, the port city of Saint-Malo is in Brittany not Normandy. Unless you are referring to the little village of St Malo de la Lande.
As noted above, there is a Saint Malo in Normandie, but I'm pretty sure you're referring to the one in Bretagne. If so, I would check Gault & Millau's recommendations for restaurants.
If, on the other hand, you are hoping to visit Saint-Malo-de-la-Lande in Normandie, you'll have to head south to Tourville-sur-Sienne (l'Extravagante) or west to Blainville (Le Mascaret is good) or Agon-Coutainville (lots of choices) for restaurants. The only place in Saint-Malo-de-la-Lande is a bar/tabac.épicerie called Le Montgomery.
I had a wonderful meal at Bouche en Folie. Reservations are definitely required.
I dunno about restaurants but Snachez is the best glacier ever.

We had an apartment and ate a lot of kouign amann -- a classic Breton pastry - for breakfast -- finding good ones in Paris is not easy but they are all over in Brittany. Enough sugar for a lifetime, but really good. The landlord left us a couple for the first morning and we were hooked.
