Looking for best 3 days in Provence Region

We are looking for a more quiet itinerary in Provence in May before a Mediterranean cruise that will be Italy heavy. We will have a car and are looking for short hikes, great vistas and wonderful food, as well as historical sites and museums, but with less emphasis on Roman ruins. We are considering Luberon hill villages, Aix-en-Provence, St. Remy. Any suggestions - additions or subtractions?

St. Remy, especially if it's a Wednesday. That's open market day in St. Remy and theirs is wonderful, goes all morning. Then visit Saint Paul de Mausole Monastery, which was the asylum where Van Gogh lived for a year

A culinary day in Aix-en-Provence. We had a wonderful experience doing this with Gilles, who calls his business Provence Gourmet. It started out with shopping in the open market for the ingredients we would need (not the large, touristy open market but the one in a quieter square, used by local restaurant chefs), then we visited a bakery for our bread, a butcher for our meat, and a winery to taste and select wine. The cooking was done in the outdoor kitchen on the patio of Gilles' home. We prepared and enjoyed a four course meal . . . such a fabulous day!

Roussillon, my favorite village in Provence. Hike on the ochre trails . . . so beautiful.

Ditto everything Vickie posted. St. Remy is great on Wed. Market day. We stayed a week in June in Rousillon and it was nice spot to have hikes and see vistas, easy trips for more beautiful vistas. We found a beautiful rental, message me if you'd like the info.
You really can't go wrong in that area.
