I would check out mushroom caves to visit. I have no specific ones in mind. Some are, I believe, in caves with stalactites and stalagmites. Maybe check the tourist websites for the area. Also, check out troglodyte caves and villages in the area. Again, the tourist authority may list available sites. You have a car? I would guess there are many things to see within easy drives of Amboise.
Tours has a beautiful cathedral and a nice medieval old town to explore. Saumur is also worth a stop and has troglodytic cave dwellings, and nearby, I believe, some mushroom caves to visit. Montresor is one of "Les plus beaux villages de France".

Will you visit any chateaux when in Amboise? I hope you don't exclude all of them. It would be a shame to miss Chenonceaux, the most beautiful one, IMO. You could pick one of your days there and see two chateaux in a leisurely manner, or even three if one or two are the smaller ones, then use your other days for what I mentioned above. Enjoy your trip! Amusez-vous bien!

I'm not sure if these are seasonal, but the Loire Valley is also a good location for taking a hot air balloon. We did one from Amboise a few years ago and really enjoyed it. But that was in July, so I'm not sure what the experience is like in October.

I spent some time in Tours which is a 19 min. ride from Amboise. I loved Tours, hanging out in the old town and by the river, going to the market, cycling from there to see the gardens in Villandry, there’s a beautiful cathedral…

Of course, Leonardo De Vinci's Chateau du Clos Luce in Amboise would be a great way to spend a couple of hours.

Cave de Roches is a great activity. If the weather is nice, drive to Montresor and walk on the Balcons del’indroisi. Chedigny is also a lovely town to visit.

Both Loches and Montresor will be worthy visits. In Amboise, the most-underrated place is remote Chateau Gaillard.
I am done. The valley
