We will be visiting the Loire Valley, staying in Amboise, using a daily tour guide to see the chateaux -- do we need to rent a car to have access restaurants?

There are plenty of restaurants in old town Amboise. On Heart of France tour we stayed at Hotel Le-Belle-Vue. Also walking distance to da Vinci's home, well worth the visit. Enjoy

Ask at your hotel (and your tour guide) about the restaurants to visit/avoid.
Because of the eulogising by a certain RS, there has been an influx of less than good restaurants into Amboise. There are places locals eat, and there are places that tourists eat where the service and food is not optimum because the clients aren't the type that return.
You won't need a car to find either type - although we hardly even eat in the town itself.
