Loire Valley as place to stop between Paris and Rodez

We are just getting into planning a Spring trip to France. We'll be in Paris for one week and then head to Rodez. We have three nights/four days open between Paris and Rodez. We are thinking about going to Amboise and the Loire Valley. We will take a train from Paris to the area and then get a rental car. I'm seeing some nice places to stay that are outside the town of Amboise. Would you recommend we stay in the town of Amboise for the three nights? We like to be able to settle down after a long day and be able to walk to restaurants and enjoy the evenings. We ALSO like quiet 4 star hotels that offer half-board options and may be in the countryside. What's a planner to do? It's early, but I'd like to see if you have any suggestions or what was your experience?

Just to inform you that the trip by car from Amboise to Rodez is going to be quite long, at least 6 hours before seeing Pierre Soulages' black, and that there are plenty of interesting things to see on the way since you will cross the Massif Central mountains.
