You dont need a tour guide. Comprehensive audioguides are available at reception. Or are you asking about the town, and not the Chateau?
for the Chateau .. ... the audio tours provide a good overview?

Audio guide has a lot of details.
According the website offers Château de Fontainebleau guided tours, but gives no details (as far as I can see) about the time you can join them. Expect most tours will be in French, private tours are outside opening hours. Contact the museum or the local tourist office to know more.

Instead of an audio guide you can use a video guide if you like.
That has been my experience in the Chateau as well, that the guided tours are in French only, except one time ages ago the guided tour I saw was in Italian, most likely by special arrangement.
I would suggest getting the audio phone. How effective is that, can't say, never used it all the times I went through the Chateau on my own.
