I may be traveling to Nice at the beginning of April solo and looking for a good value local hotel or bed and breakfast that has great owners who help you! I am looking for a city in Europe that is not huge but offers good train service for day or short stays in and around Provence. Any suggestions for Nice as well as Aix?

Nice offers frequent connections by both bus and train to destinations all along the coast, and a few inland. From Rick's guidebook, you might consider this small, owner-operated B&B: www.nicehomesweethome.com.
The Nice metropolitan area has a population of almost 1 million. I mention this because you say you're looking for a "city in Europe that is not huge."
Also you said you're looking for somewhere in Provence. Nice is at the east end of the French Riviera, it's not really in Provence.
You mentioned Aix. It would be more like what you say you're looking for. Still big (150,000 population) but at least in Provence.
