Are we too early for any performing arts programming in early June for Avignon, Arles, Aix, and the area?
I've searched, and it seems to begin in July.
Might anyone have any known sites for quality performance?

Cities that have Opera Orchestras such as Montpellier, Marseille, Toulouse are in the last month of their season in June. The local Office of Tourism will have the information for you.
The Festival d'Avignon is world-famous, worth changing vacation dates for, depending on what groups are appearing there this year. Referring to more one or two-off events, it is not that easy to score tickets for single-performances of, say, outdoor opera in a Roman theater. The demand is very high.
I think Tim is referring to the performances in the Roman theater in Orange, the Festival des Chorégies d'Orange from June 13th to July 25. That would be amazing to attend a performance there.
Avignon has an important theater festival July 5-26 for which you'd need to be fairly fluent in French.
