I am flying into Charles de Gaulle and was hesitant to buy train tickets to Albi in case the flight delayed. Is it relatively easy to purchase last minute tickets? I've also thought about possibly flying to Toulouse from CDG and catching a train to Albi there. Any advice on last minute travel is appreciated

Connecting by air to Toulouse makes sense both in time and (probably) price. The train to Albi from the central station is a commuter run with no assigned seats. It takes about an hour and runs frequently during the day. https://en.voyages-sncf.com/en/
Buy the extension from CdG as part of your airline itinerary, not separately, using a multi-destination search function.
