Hello!
Will traveling from Paris to London be an issue on May Day/Labor Day? I saw that many stores and things will be closed and trains might be affected. What about the metro and Eurostar?

No problems with the Metro or Eurostar on May 1.
I've been there on a May 1 and in my "neighborhood" the stores were open as were the restaurants. There were also locals out with small stands selling lily of the valley bouquets. Most of the museums are closed but if you are leaving for London you'd not have time to do a museum anyway.
