Be aware that people from different generations have different ideas of what is jazz and what is not and there are different styles of jazz that appeal only to a certain audience. That being said, you should try to get an idea of what style a particular artist plays before going to any club that has been around before going. Look up any artist you don't know on YouTube and you will find some kind of recording performance.
These have all been around a while over 20 years:
New Morning Cafe (a lot of the great American jazz musicians past and present have played here and still do).
Duc des Lombards (small club New York level, local and international talent).
Sunset/Side (tiny cellar jazz club that books New York level local and international talent).
Caveau de la Hutchette (this is swing jazz dance club with live band of you like that style)
