Itinerary suggestions for 2 weeks

I know I am early, planning a May 2021 trip, but I know very little about France and you all were very helpful about my rental car questions.

Here goes-
Day 1 - Arrive CDG, train to Caen, get rental car, on to Bayeux.
Day 2 and 3 - one day D-Day beaches, one day Honfleur and Bayeux. (3 nights)
Day 4 and 5 - Loire Valley, stay in Amboise. Visit Chateaus. (2 nights)
Day 6, 7, 8 - Beaune. Visit winery and Dijon. (3 nights)
Day 9 and 10 - Colmar, visit Strasbourg. Return car. (2 nights)
Day 11 - onto Paris for 4 nights. Then home.
I would love to add Giverny some how, but I don't know where. Is it too far from Paris as a side trip?

If additional nights are possible, I'd add an extra night in the Loire. Two nights only gives you 1 1/2 days of touring the chateaux. If you add another night onto Paris you could do Giverny as a day trip.

I would drop Colmar and Strasbourg, though both towns are terrific. It's just that you seem to be trying to cram too much stuff into the time you have available. I also would reduce your time in Beaune/Dijon to 2 days. The area is not really that interesting, in my opinion -- and I live in the Bourgogne-Franche-Comté région.

Instead, you could allocate the time you've freed up to the lower Loire valley (the upper Loire valley is southwest of Dijon and Beaune) and Paris, allowing time for a day trip to Giverny.

I am usually an apostle of slowing down, but have to say that while this is fast paced and tight, it is feasible if you are nimble and this is the sort of trip (quick snapshosts) you want to have.

Still you might consider that the trip from Amboise to Beaune will be lengthy, and that you will be spending a good amount of your trip simply getting to places.

Giverney makes a fine day trip for Paris. More like two-thirds of a day, though you can lengthen it.

I would not cut Beaune any shorter, since you only have two days there as it is. There is plenty to see in Burgundy if you have wheels, and Beaune makes a fine base.

Finally, for your consideration: There is an early train from Beaune, connection in Dijon, that will deliver you to Charles deGaulle by 9 AM. There is a similar option from Colmar, arriving 9:30. These trains do not pass though Paris.

Consequently, you could return your first car in Amboise, take the train to Paris and spend your 4 nights, continue to Colmar, rent your second car, and finally return from Beaune on your last day.

This avoids the long drive from Amboise to Beaune and, perhaps, makes better use of your time.

AFAIK there is only one rental agency in Colmar, several in Strasbourg. You don't need a car at all if you only want to see those two cities. Maybe drop the car in Dijon and train to Strasbourg.

Of the places you're headed to I've been to Normandy and Paris only. I spent eight nights in Paris and fit in Giverny as a leisurely day trip via train. But you have 4 nights in Paris, so that's three days.

I suggest you look at some travel videos or guidebooks or trip reports in this forum and see if what you want to see in Paris fits into your three-day plan. Then do the same for your other locations and you'll know if these "snapshot visits" will give you the sort of experience you're expecting.

For example, if you don't want to see both the Bayeux Cathedral and the Tapestry you can split a day between Bayeux and Honfleur. But that's two hours of driving the day before you drive to the Loire Valley (which is three hours if you don't stop, so probably three and a quarter).

If you're very interested in the Invasion of Normandy you'll want a guided tour to explain what happened on the beaches and fields. They're pretty spread out. We took a two-day guided tour that covered just the American beaches and sights. If you're not very interested you could skip Normandy to give more nights to your other locations.

I hope this rambling post conveys the method I use to decide how much time to spend where - it's a very individual process.

The best part of The Alsace is the Route Du Vin villages of Eguisheim, Kayersberg, Riquewihr and others. Save a day with your car driving this beautiful area and exploring each charming town. Colmar and Strasbourg are not the only sights.

I have revised my plans knowing I have too many places. I will have 15 nights. Still deciding where to start on arrival, thinking-----
Amboise 3 nights. How easy is it to get there from CDG? Will rent car in Amboise
Beaune 3 nights, including Dijon.
Colmar 4 nights, including villages and a day trip into Germany.
Paris 5 nights.

It's a schlepp from Amboise to Beaune. Get an early start and break the trip in Vezeley. Or consider spending the night, which is magical.

I think you are smart to plan this far in advance! I am going to Paris in May and I have been planning for a year. I have almost all of my tickets purchased already, so there will be no last minute scramble to arrange tours or decide when to go to which museum.
