Is Sancerre & Environs worth 1-2 nights when going from Loire to Burgundy or more time in Burgundy?

We're in our 60s planning to visit Loire (5 nights) and Burgundy (4nights) and since we really want to experience French wines, were thinking of stopping in/ore near Sancerre for 1-2 nights to visit a vineyard and taste Sancerre & Pouilly Fume before heading on to Burgundy -- somewhere on the wine route. Is it really worth stopping in this area? If so, how much time is needed and what wineries/vineyards do you suggest?

Perhaps we should just go from Amboise in the Loire Valley directly to Burgundy and spend the extra day or two in Burgundy (5-6 nights) or one extra day in Loire (6 nights) and one in Burgundy (6). In Burgundy should we spend a few nights south of Beaune and a few nights north closer to Dijon, since our TGV train leaves early from Dijon-Paris the last day? We're not really sure how welcoming wine producers are to American visitors and how best to get appointments?

What must see villages are there along Burgundy wine routes and places to stay or eat?
