Is there any map for the iPhone of Rick’s Paris walks? Already plotted out? It seems like this would be such a great tool to use to keep one on track and so that your nose doesn’t have to be in the book all the time. Advice?

Not that I know of, but you could DIY with plotaroute. I use it for planning hikes and country walks, checking distance, elevation, etc. I believe you can even add landmarks and personal notes.

Wouldn't your nose then be in the phone all the time? 6 of 1, half a dozen of another. I've found Rick's walking directions to be very good, without needing an actual map. And you would still want the book to read his notes on the various sights you're passing by. (Assuming the walking tour isn't available as an audioguide)
The Rick Steves Audio Europe app has all the Paris walks available for download. There’s a map included but I’m not sure how different that is from the guide book.
Yes, get the Rick Steves Audio app. It has not only the audio of the walk, but also a transcript of the audio and a map, and the ability to skip to the section you want (so, you can see from the transcript where you want to start or re-start, then go to that section of the audio).
I have the app but am looking for a more gps-like ability so that I can have the convenience of glancing at my phone to make sure I’m on the right track while using the book. Used the book alone last spring all through Spain and found myself trying to plug in addresses, etc while on the walks. Might have to go with the audio guide alone after all. Not an aural learner and appreciate reading for info.
This is a low-tech idea, but maybe simply photocopying the pages of the walk so you have them more easily in your hands than the whole book? You say you prefer visual for learning — dealing with a couple of photocopied pages is easier than flipping back and forth in a book.
I also use Rick's own method of carefully pulling the pages out of the book and using one of the little folders he sells on here, at least where he doesn't have the audio tour. However, I've done dozens of the audio walking tours and never found I needed the paper as well. You can always check yourself on Google Maps if you somehow get lost (for example, you can't go down a street he tells you to because of construction). I've actually done these walks in the rain, holding an umbrella, and they work really well. If you listen ahead of time and follow on the digital map, you'll have an idea of what to expect.
