Cannot get to Frankfurt as planned tomorrow. Instead going to Paris CDG. I’m staying in Cochem. Suggestion on train situation? Best App?

With some quick searching it looks like you can get to Saarbrücken from Cochem in two hours on Deutsche Bahn. And then from Saarbrücken to Gare de l'Est on SNCF - some are direct and are fast (1:50) and some have changes.
It looks 4 hours of actual travel time is probably the best you can do.

And then you need to get from Gare de l'Est to CDG and I think your best bet is to walk to Gare du Nord and take the RER B to CDG.
