I just returned from a 30 day trip in Spain, 20 of which I was driving a car all over Spain. I plan to go back to France next September but I am thinking that I will stay for one month in the same place and not have a car. That being said, I am wondering what an average price for a train ticket would be from let’s say Narbonne to Aix-en-Provence, for example. I plan to use a Narbonne as my base and travel around to different places in the south and central parts of France. Any hypothetical ideas would help me here.

FRs national rail website is https://www.sncf-connect.com/en-en/. It looks like it will set you back around 42 euros. Train tickets are often cheaper when the fares become available that can be purchased about two months out.
If you are planning 12 months out - maybe investigate what sort of discount options exist for French trains. There are many regional tickets in many countries or a various times of the year. The Man in Seat 61 is a very useful website for train journey logistics and possibilities.
Use a user friendly site like Trainline and look at fares, Google can cough them up too.
Hard to predict what train fares will be a year from now, but you can safely assume they'll be cheaper than renting a car.
You can also safely assume that both schedules and fares will be similar to now. For local TER trains just buy on the spot. France is also thinking of creating a pass, similar to Germany that gives unlimited local travel.
Also keep an eye out for Black Friday sales on the carte advantage, I scooped one up a few years ago.
