I am traveling with 11 of my family from Montpellier to Hamburg, Germany this summer and the flight times are not great. Our best bet is a 7:15am flight out of Montpellier. Airline recommends arriving 2-3 hours before flight. Does anyone have experience with the MPL airport in August and could let me know if this time is actually needed at that hour?

With 12 people arriving at a strange airport for a 7:15 flight, I would be very concerned that everyone is ready when the airline says to be ready. What's the worst that can happen? You arrive later than advised and you miss your plane. Are you saying that the 7:15 flight to Hamburg is the only flight from Montpellier on that date?

Budget airlines require you to be at the airport earlier than traditional "full service" airlines do. If a budget airline says you must be at the gate 40 minutes before departure time, they mean it. 1 minute late and you may be left behind.
If your airline says "2-3 hours", I would be sure you are standing waiting at check-in by 05:15.
The good news, this is an intra-Schengen flight, so no border checks departing or after landing, just security.
The Montpellier airport isn't very big, nor is it very busy.
But will also depend on how many security people are working then - hard to predict.
