Hotel just outside Bayeux Chateau Damigny? or Reine Mathilde

Has anyone stayed in this chateau? It's about three miles south of Bayeux. The place I really wanted to stay—Le Petit Matin–is full during the day we're in town. The other option available to us in Reine Mathilde, which I know has many fans here. It's 235 Euros for us (family of three) to stay in the annex plus 15 Euro each for the breakfast. The chateau is 128 a night and breakfast is included, which gets rave reviews as does its evening meals. I'm not sure that we'll have another experience like this (country manor type stay; though haven't booked my Amboise days yet) but would love to hear any feedback.

Sounds like you really like the Chateaux, so go for it! If you have a car you have more flexibility in lodgings than many people who need to find hotels in town.

I've stayed at the Reine Mathilde in the annex. Really nothing special other than the location, and kinda dumpy as I recall. I have eaten there many more times and enjoy the ambiance—especially outside. No experience with the other places you mention.
