Which is the best Hop On Hop Off Bus to do in Paris? I heard that the red Big Bus has the most frequent buses coming to their stops but that their audioguide is poor.

You can walk to so many of the sites in Paris and when you can't take the metro or the bus. Use the RS guide or Eyewitness travel walking tours/routes. Another idea is to take one or two of the ParisWalks. Personally, I think that is a better use of funds. Hop on Hop off would drive me nuts. All the waiting, having to do site seeing at their pace, possibly not being able to see as sites go by.
There are a whole bunch of podcasts called "Join Us in France". The person that does that also has walking tours that you can purchase, people say they are excellent

There are a few cities where a HOHO bus works well
Paris is not one of them

Skip them. If you visit NYC, skip them too.
