We will be staying in Honfleur for 3 nights and then much later in the trip staying in Bordeaux for 2 nights before catching the train to the Bordeaux airport. Any recommendations for a centrally located chambre d' hote or hotel? We would like to pay under €120 per night if possible.

Honfleur: We stayed at the centrally located Hotel le Ecrin and liked it there.

The Mercure hôtel in Honfleur isn't badly priced
And the Novotel Centre Bordeaux can be reasonable as well.

We stayed at a B&B in Honfleur called Le Fond de la Cour

It was really nice -- lovely little courtyard and excellent breakfast in a pleasant kitchen -- it was chilly when we were there; in nice weather you can dine in the courtyard. They messed up our booking and so we ended up in their small apartment, which they billed as B&B and included breakfast; this gave us a bit more room. Easy walk to the beach and cliffs.
