There are so many must-dos that your question is difficult to answer. Where you base depends on your interests: cave art, markets with duck products, canoe trip, castle on hill. We're interested in the caves with prehistoric art more than the chateaux, canoes, or ducks so we based in Les Eyzies-de-tayac-sireuil, though there were chateaux, markets and medieval cave dwellings there too. A first reading of guidebooks, which you can get from the library, will help narrow your question.
30 years ago we spent a week at a house in the direction of Bergerac, and found that we spent a lot of time driving the same route to the east in the direction of Sarlat. So this year, when we decided to go back to the Dordogne, we rented a house in Beynac, not too far from Sarlat, and thought that was a better location. More villages we wanted to visit, several chateaux, and lots of markets.
We liked Beynac, specifically Le Petit Versailles, a few miles west of Sarlat. Many other choices in and around Sarlat. I haven't been to Bergerac, but my impression is that more of the "must dos" are closer to Sarlat. That said, I'd like to see Bergerac and Perigueux too.
Use a guidebook to figure out what you most want to see and do, note locations on a map or Google Earth, and see if a pattern emerges to help you choose your base.
