Can anyone tell me if the shops/sites, etc. are open in the some of the smaller towns of Provence and the Cote d'Azur in late October? (specifically St. Remy deProvence, St. Paul Paul de Vence, l'Isle-sur-la-Sorgue, and Eze) ?

What kind of shops are you talking about? These are towns or villages with a population of several thousand people. So there are shops, garages, pharmacies, restaurants, banks, and even supermarkets all year round.

Seasonal shops and restaurants close for the season on Novembre 2nd. November 1st is a holiday when people travel for the weekend, so you can count on the shops and restaurants being open. Additionally, the places you are going remain fairly active most of the year.
