Anyone have recommendations for high end bike shops in Paris? We have a fan of all things Tour and fast riding who would love to check out the road bike scene in Paris!

I've never quite understood the fascination for bicycle racing (or racing of any kind, actually) but I would suggest you search the internet using the terms:
vélo haut de gamme paris
...and you'll probably find what you're seeking. If your browser allows you to specify results from France, so much the better.
A couple of other hints would be that VTT means vélo tout terrain (all terrain bikes or what in the U.S. often are called mountain bikes) whereas vélo de route means road bike.
