There is bus service to St-Paul-de-Vence, but tomorrow is Sunday, so I don't know about the frequency. The tourist office can tell you where the bus stops. I believe the company is Lignes d'Azur. You may be able to locate the schedule online.
Gourdon I don't know about.
Yes, I remember going to St Paul de Vence by bus from Nice myself. But again, Sunday in August, you'd better check the timetable!
Bus 400 to St. Paul de Vence and Vence leaves from the triangular shaped place right in front of Le Meridien, on top of Parking Ruhl (Albert 1er), near Avenue de Suede and Verdun. Hourly on Sundays. Watch your last return. Lignes D'Azur is the website or download the app to your smartphone.
The best way to get by Gourdon, however, is a car. You can rent from major agencies in the centre of Nice, like Hertz and Sixt next to Le Meridien or several others at the train station (I tend to prefer the major international rental agencies). I think I noted this before in your prior post.
Unfortunately, I don't believe there is a bus that goes to Gourdon. The closest you can get is Bus 11 on Envibus to Bar sur Loup/Pont du Loup, and then a hike/walk. Bus 11 departs from Sophia Antipoilis, which you can reach from Nice by train or bus. Doing both in one day is not likely feasible.
