karlaforsythe,
When we went to St. Sulpice last May, based on the website and recent comments on this forum, we went an hour before the 11:00 mass, as the concert is now before mass, not after, as in the past. Unfortunately, there was not much music, as the mass was on Penrecost Sunday, and the mass was for the sacrament of Confirmation for youth, presided over by a bishop. Thus, the usual hour of music before mass was curtailed. We still heard beautiful organ music during the mass. Check with the church's website for mass times, etc.

Our hotel is very near St. Suplice, and we would like hear the organ. I'm not sure I understand what it means when it references "auditions." What does that mean?
This is copied from the website-

CONCERTS AND AUDITIONS
Every Sunday the organ plays at 11 a.m. mass and for evening mass. The choir organ is usually heard at Sunday and festive masses at 9 a.m., 11 a.m. and 6:30 p.m.

Depending on the Sunday, the auditions take place either at 10 a.m. then prelude at 10:45 a.m., or at 4 p.m. Consult the AROSS website ( www.aross.fr ) to see the detailed schedule of auditions.

I believe they refer to "hearing" or "listening" to the organ, not tryouts.
