We will be driving from Guedelon to Sarlat. Are there any noteworthy towns/sights along the way to break up the drive or to possibly spend the night? We have several days to explore the Dordogne so we were looking for something before we reached that area. Thank you!

The city of Limoges is about 2/3 of your way to Sarlat. If you are interested in porcelain, Limoges is famous for it.
But instead of stopping in Limoges I would leave Guedelon quite early (8 am) in the morning to go directly to Collonges La Rouge
and right next to it, the Chateau de Turenne:

From Turenne you will only have 1 hour of driving along the Dordogne river to be in Sarlat

Bourges is noteworthy, well-preserved medieval town. Not sure if you'd need to spend the night there, but it is right on your way!
By the way, do take the free roads via Limoges and not the toll highways via the A71 & A89. It takes about the same time and saves a lot of money!
