Good Steak Tartare in Paris?

Does anyone have any recommendations for a good steak tartare in Paris? Specifically the Latin quarter or near the opera house...

It's pretty much ubiquitous in casual restaurants. Don't sweat it.
It's not as if the chef's skill will come shining through.
