We are traveling by car in Burgundy in a few weeks and have a plane to catch in Paris (Orly) by 2pm on a Thursday. I'm afraid the drive will be too long from Beaune, so we're thinking of staying somewhere closer to Paris. Any suggestions?

The drive is not that long, about three hours, 4 at the very worst, so you could leave Beaune at 7.30 AM.
I understand that feels risky.
In that case Auxerre and Joigny still leave you with a 2 hour drive, so I would rather recommend Fontainebleau or Moret sur Loing, reducing the drive to 1 or 1.15 hour max once you let the morning rush go by.
Vezeley would be worth a detour, but you'd still be pretty far from Paris.
