Hi, I too have Celiac. Were you able to find out about restaurants elsewhere?

Since you need a gluten free restaurant, I'm afraid you will have to self-cater in Bayeux. It is a small town after all.
Paris is thankfully no issue. There are even gluten free bakeries, the one I know is Chambelland in the 11th arrondissement.
