I'm looking for a place to stay for a couple nights in Normandy. I found a few possibilities on Airbnb that would work and also just started looking at gites-de-france.com. It looks like gites rent only for a week or more. Does anyone know if any are ever available for just a couple days?

It depends on the gite owner and when you're booking. Off season you are more likely to find short term rents.
I always relate 'gites' to weekly rentals and not including linens in the rental price. Their market seems to be families with cars driving from home. Of course, that is most likely not true with 100% of the rentals, but it is like summer cottage rentals in Canada...minimal services.

And if they're not included, you can almost always get them added on for a few euros.
As to rentals of less than a week, when I first started renting from Gites de France about 30 years ago, it seemed that no gites anywhere were available for less than a week. Then came the availability for weekends at some gites. Now you see many gites that allow weekends and even partial weeks. I assume that would be much less likely during high season.
Rather than looking for gîtes, look for chambres d´hôtes. Chambres d´hôtes are the same as Airbnb but have been in existence far longer. You might try these sites:
This is only an "I have heard", not personal experience, but someone had said they reserved a gite for a few days only to have the reservation cancelled when the owner was able to rent it for the entire week.
We got a Saturday-to-Saturday rental in St Remy using HomeAway and found it quite satisfactory. Also used that agency for shorter stays in apartments in Bayeaux, Loire, Sarlat this spring.

Gundersen - Please enlighten us with the details of why a chambre d´hôte is nothing like Airbnb? One supposes you have stayed in any number of chambres d´hôtes and know all about the differences.
None the less, if someone is considering a gîte yet cannot commit to stay a week or a month, he should be looking at chambres d´hôtes.
