Destination is Strasburg and Nancy. Is it better to fly to Paris and take the train to Strasburg or fly to Frankfurt? I haven't research trains from Frankfurt to Strasburg yet - can you get a direct train and how long would it take?
No direct trains from Frankfurt airport, but a connection every hour. Travel times are 2 1/4 hours.
There are only a couple of direct trains from CDG in the morning. Later requires taking the RER to Gare du Nord and transferring to Gare de l'Est. Travel time varies from 2 hours for the direct trains, to 2 1/2 to 3 hours if a transfer is required.
For trains from CDG look at the SNCF website. For trains from Frankfurt, consult the Dbahn website. Either start point would get you there in under 3 hours. Most will require a change of train at some point, but it looks like there are some trains from CDG that don't require a change.
I see a nice CDG departure for Strasbourg at 11:23AM, which goes well with my east-coast USA departures. It's 1:50 time, with two stops. Pricing minimization is more complicated in France than it used to be, and I haven't been there lately.
I personally don't have anything against FRA, but people either believe it is the best way to get to Germany, or they believe it is over-scheduled and subject to military and political delays. The facts? I don't know.
I will say that we had an "unattendended bag" incident at CDG TGV when we last took the train to Strasbourg to begin our Alsace vacation. Luckily, they reopened our platform in time for our prepaid, non-changeable ticket. (Even if they would have allowed us to change for free, it was peak season with seats generally sold out.)

We did the direct bus from FRA to Strasbourg on Flixbus. Cheap and easy. We also have done the high speed train from Paris to Strasbourg. Either way, i's a piece of cake.
