French Riviera to Paris- where to stay/stop?

Hi travelers,
I have 12 days from England Mid July (visiting for a wedding) and have decided to take our first Euro trip with kids to France. We are focusing on 5 days French Riviera and 5 days in Paris (2 days travelling in between), we won't be renting a car, and will be relying on transit.
July being peak season - where should we stay in S. France (ideally, access to beach would be great if in budget)? Would it make sense to break the journey in Provence for a day (eg. Lyon) on our way to Paris?

In the French Riviera there are regional trains and buses from Nice to the small towns nearby. You could stay in charming Villefranche sur Mer at Hotel Welcome by the waterfront. There is a lovely shale beach there. Or you could stay in Juan les Pains near Antibes for a more sandy beach. The beach in Nice is rocky. I am not sure what is available for July. The French Riviera is beautiful!
