Stay in Vence or St Paul de Vence.
We can hike on trails directly from Venice, but the hotels and restaurants are more appealing in St Paul de Vence. Suggestions?
We plan on staying 3 nights and driving down to Nie and the other villages such as Eze.

If you have a car, it really does not make a difference. There is a path connecting the two, btw and they are not far apart. When you visit other towns, you might consider going to Tourettes-Sur-Loup and Gourdon. .

Many thanks. I did not know there was a path between the Vence and St Paul de Vence.

Regarding paths: "Geoportail" (https://www.geoportail.gouv.fr/carte) has detailed topographic / hiking maps for the whole country. The portal is only in French as far as I know, but translation tools should be able to help navigate the very simple menus.
