French and Italian culinary lessons

Hello fellow travelers,
I have been searching for French and Italian cooking lessons situation.
My desire is to secure a 4 to 6 weeks course in France and then in Italy for a
Separate 4 to 6 week course.
I am aware of the the more well known cooking schools in each of these countries.
But what i am interested in is a more rural/country setting where I can get "real country cuisine"
Instruction - "farm fresh to table" cooking. If anyone is aware of such an idealic situation could you
