I find it overwhelming to plan trips sometimes and France is one of them. Does anyone know of a high end agent based in France that can help me plan?

Travel & Leisure and Conde Nast Traveler magazines have lists of this type of travel agent, check them out.
Also look towards your premium credit cards, like Amex Platinum and Chase Sapphire.
