We will be staying in St. Paul de Vence for 5 nights. Would it be feasible to take a day trip to Eze? What should we see there?
Also, we will be staying at Hotel Les Vergers in St. Paul. Is anyone familiar with this one?

Will you have a car? St-Paul-de-Vence is rather isolated for a long stay if you are relying on public transportation.

Definitely feasible. I did a self-guided walking tour. It may have been from the RS France guidebook. I only spent a few hours there, lovely place.
