First time going to Europe. This is all overwhelming. Any suggestions on the best trip to book for France or Italy. Also the best time of the year. Looking for a trip of site seeing, shopping, food, vineyards And etc. Need suggestions

Our first trip to Europe was to Italy, so I am partial to there. How much time do you have, as this would impact your decisions?. Both Italy and France have great food, and vineyards. I would take a look at the Rick Steves tours itineraries for ideas at least, and maybe even just to have someone else do the planning if you feel that would be something you like. You could also use that as a guideline to plan your own trip, however if you do then add extra time to each stop as you will need to get yourself between places.
In terms of time of year, I like spring or fall for Italy ( April, October). I'm not as familiar with France for weather.
I would opt for the easier/faster/less expensive to travel to destination from my home airport as a priority in making my choice of first European destination if I want to be practical, and the more compelling/intriguing/desirable country I am wanting to visit if being ruled by my heart. If you do even minimal internet/guide book research, you may find yourself naturally drawn to one country or the other or you can flip a coin and let chance make your choice. Zero in on what your travel style is, between big cities and blockbuster sites and/or dreams of intimate visits to more rural areas at a leisurely pace. Consider your time of year options, preparing yourself to deal with busier locations during warmer months and knowing you can be enjoying quieter urban or rural visits in late fall or winter. Be aware of holidays, transportation options (cities best visited by train, countryside by car) and maybe decide which cuisines you really prefer? Here on this website you can peruse the numerous videos, articles, tour descriptions for each country and keep score of how many times you say "I definitely want to go THERE" and then plan accordingly. If trip research and planning doesn't float your boat, consider taking a tour and the nuts and bolts are done for you in exchange for your participation in a pre-scheduled experience as a member of a group. On RSTs, there is always 'free' time to do your own thing; it's not like your in lockstep 24/7 while on the tour. I'm a city person, if I picked France as my first European country I would plan a visit to Paris and do day trips to Giverny and Versailles. If I picked Italy I would go to Florence and do day trips to Tuscan hill towns and places like Pisa. Have a magnifique and fantastico time making your decision!
If you’re feeling overwhelmed by the planning then choose a Rick Steves tour. The Venice Florence Rome tour is an excellent choice for a first trip to Italy. Or choose the Paris and the Heart of France tour. If you feel you must make all your own arrangements flip a coin and then mimic the itinerary of either VFR or Paris and ❤️ tour. The suggestions given by Theresa are also excellent ones. Pick either Paris or Florence and book a hotel. Then book day trips or follow the RS guidebook for the day trips to Versailles and to Giverny or to Siena and to Pisa. You could also book the RS Paris city tour. Go a few days early or stay a few extra days so you can also go to Giverny. The tour includes Versailles.

RS Tours do NOT focus on shopping. You can do so on your own time, but 'shopping' is not built into the itinerary.
First two weeks of October 2014 I flew from SFO - CDG - FCO on Air France. Visited Rome, took a train to Florence/Pisa, another train to Venice, then flew back to Paris/CDG for a week before heading back to SFO. I've been back to Paris end May into June, beginning of September and this year it will be for the month of October.

How heat tolerant are you? I'm not, lol, so Italy doesn't work for me before October or so. France is good in October, even a little chilly this past October in the first week but by the last week of October it was back to being seasonably moderate temps.
April and May are great in France. April has a lot of Holy Days so I would avoid Rome at those times. May is getting too hot for me in Italy.
Just a word...I love RS tours and have done 12 of them. BUT they are not shopping tours. You can certainly shop in your free time but the groups do not do "shopping opportunities" like some tour groups do.
