I had planned to take a train from Bayeux on May 1st 2024 to Paris and on to BRU . Will this be possible or should I cut Normandy short and travel on April 30th. Thank you !!!

Long distance trains run normally on 1st May, and so does public transport in Paris (though not in most of the rest of the country), so you should not have any problems.
Just don't count on anything being open in Bayeux if you need to buy a snack for the trip.

I had a similar question as we planned (ok I planned but my husband will happily come along) to take the TGV from Paris to the Loire Valley on May 1st. I don't mind if most shops are closed because it's a travel day but will the train run that route and will the rental car stores be open at the train stations?

The question about the trains was already answered; it's a yes.
For rental cars: usually yes at major train stations, but the only way to know is to try to book.
