I know that you can fill water bottles in Italy at fountains (spouts), but what about France? Not going to Paris, but Provence and Nice areas, small villages and was wondering... Merci!

I'd say that I found them in squares and parks, if memory serves, and they are drinkable unless marked non-potable. I usually get by without buying water for my wanderings. You can start out with some hotel tap water in your bottle, enough to keep you going, then if you spy a colder source, dump the old and refill.
If you're talking about drinking fountains, go ahead. If you're talking about big ornamental fountains in public squares, I'd pass on that water. Probably from the same source, but may be recirculating, and with birds in the ponds and whatnot, uh, no.
In Paris there are Wallace fountains all over that are designed to provide drinking water -- you need your own cup or bottle.
