We depart before the new flu vaccines arrive in our area. Anyone have experience or recommendations for finding and getting flu shots in France or Holland? Thanks.

Keep in eye out in any airports you are passing through. In years past I've been able to get them at Pharmacies located in the terminal while waiting for my plane.
I can only speak for the Netherlands, but I’m very doubtful you will be able to get a flu shot here. In the Netherlands, the health system is organized in such a way that everyone is registered with a family doctor or general practitioner or whatever you call them in your country. This GP knows your medical history and knows if you qualify for the free flu shot. Whether or not you qualify depends on your age, underlying conditions etc etc or profession (healthcare worker). Your GP determines if you qualify based on the specified qualifications and if you qualify you will get an invitation to come get the shot. Usually this is done per practice in 1 or 2 days.
So, in the Netherlands at least, getting a flu shot is not a matter of walking in a pharmacy and getting the shot.
It's a little different in France.
You can get it, but you pay out of pocket because you aren't in the system. You also have to make an appointment at the pharmacy. The pharmacy will sell you the vial of vaccine. Sometimes they offer to inject, but some expect you to take it to a MD or nurse to be injected.
If they sell you a vial, you can mix it into your aperitif.
