Hi, we are flying mid-July and I cannot make flight bookings just yet. When do you typically see flights appear for this area?

I see Hop!(Air France) has a daily flight from Rome to Bordeaux. EasyJet flies to Toulouse everyday except Thursday. AFAIK, they are bookable now.

Flights usually become available for booking 330 days out. So, if you don't see a flight for July that you expected, it's probably one that doesn't go every day. Skyscanner can show you if flights are available for your days: http://www.skyscanner.com/
A great trick that I learned on this forum: to find destinations and carriers from a particular airport, look at that airport's Wikipedia page. Here's the one for Rome Fiumicino: https://en.wikipedia.org/wiki/Leonardo_da_Vinci%E2%80%93Fiumicino_Airport#Airlines_and_destinations
and for Rome Ciampino: https://en.wikipedia.org/wiki/Ciampino%E2%80%93G._B._Pastine_International_Airport#Airlines_and_destinations
Looking at these lists, I see that Ryanair flies from Ciampino to Bordeaux, and Hop flies from Fiumicino to Bordeaux.
Looking at Bergerac Airport's Wikipedia page, it shows no flights to Rome, or anywhere in Italy.
