My husband and my self are traveling to Paris in February for 8 days. Not sure how long to stay in Paris and how far out from Paris to go. We like to stay close to airport the night before we fly back., any ideas?
Stay the whole 7 days in Paris, while taking a couple of daytrips.
You should consult a guide book to pinpoint the possible daytrips that you would be interested in taking.

Everyone is different. Some would be delighted to stay in Paris for 8 days with day trips. Some love cities and wouldn't leave the city proper. Others would prefer a mix, spending perhaps 3-5 nites in Paris and the rest somewhere else. A lot of France is within a 2-hour train ride of Paris. Think back over other trips to see what you've enjoyed, look at guide books and travel videos such as the ones on the RS site (you can stream all his shows) to get an idea of what you're choosing amongst.
Edit: just saw your reply; if you want champagne tasting then a visit Reims would be easy to do. Reims is only an hour or so by train so you could do it as a day trip, but the town is charming with a pedestrian only downtown, famous Cathedral, etc. so I'd spend at least a nite there and 2 would be more relaxing. Again, it comes down to how you like to travel. Some people prioritize seeing a bunch of sights; others would prefer to see less but at a more unhurried pace.

Re: Staying close to the airport on your last night:
In 2019 we had a flight home from Paris that left at 10 AM, so we stayed near the airport on the night before. Stayed at Ibis Styles Paris Roissy CDG hotel in the village of Roissy. Picture a 16th century French village surrounded by modern hotels with airplanes flying overhead.
I love France, but I'm just not all that into Paris. With that said, you should spend a few days there to see the major attractions. As previously mentioned, it's very easy to take the train Reims, with its champagne cellars and other great things to see. You could consider a day trip to the Loire Valley from Paris.
Just got home from a France/Paris trip. Stayed two nights in Reims, and had an awesome champagne tour with Katia of La Vigne du Roy. Not a "cheap" tour, but in my opinion very good value for what it was. Can get to Reims in 45 minutes via TGV train out of Gare d'Est.
I think cities are the best bet for mid-winter trips. I would have no trouble spending a week in Paris.
Given that it's winter, your first trip to France, and a total of only 8 days, I would definitely stay in Paris the whole time and take some day trips, such as those recommended by others. As far as the last night is concerned, I would only stay near the airport if your flight is early in the morning. I have never stayed at an airport hotel, and when I've had an early flight out of CDG I've stayed in Senlis (or Plailly several years ago). It's a beautiful town. But that essentially requires a car.
Stay in Paris and daytrip. There are so many places in France you can get to in less than 2 hrs on a train. Reims for Champagne tastings is less than an hour from Paris. You can go to Versailles, Chartres, Rouen, Strasbourg, Nancy, Dijon, and many many more.
We were in Paris for eight nights and we were glad we stayed at a hotel there the entire time except for the last night. We did do a day trip with city vision to Fountainbleu and Vaux le Vicomte chateaus one day. There are so many things to do in Paris that we didn’t get to everything we would have liked to do with the time we had. And I know that a lot of people spend a lot of time in museums there, but we aren’t big on museums, and even taking that into consideration, Paris still had tons of things to do to keep us busy. It’s also nice to just stroll the streets and take in the atmosphere. On the last night we stayed at the airport Sheraton hotel. We had an early flight out that morning and it was very convenient to stay there.
What are your interests? It’s hard to give suggestions when I don’t know what you hope to see or do or what your preferences may be.
It really depends on what you like. If you like big cities then Paris will be awesome to spend the entire time in except for your trip to Reims for champagne. Personally 4 days in Paris and I'm done. I prefer to get out to the small towns and villages. There are a lot of places you can travel out to either by train or by rental car. I would think hard about what you want to see and do. Check out Ricks books. You are relatively close to Normandy if that is of interest to you though you would likely want a car to really get around and appreciate the countryside in Normandy. Definitely stay close to airport for your morning flight.

With all due respect, Andrew, to the OP and all of us, you are a stranger on the internet. “Just trust me” is not helpful, but your travel expertise would be if you would offer it.
Andrew, without explanation, your opinion isn't worth more than anyone else's. We're not talking facts here, we're talking opinons that involve weighing various factors. As it happens, in this (very rare) case, I don't disagree with you--but only if it makes logistical sense to head straight out of Paris. The practicality of placing Paris last depends on a lot of things: the traveler's arrival time, how she expects to feel after clearing Immigration at the airport, how frequently transportation departs for the planned destination(s) outside of Paris, the travel time, the cost of a last-minute walk-up ticket to that chosen destination.
Since your trip is in a February, I agree with the others about staying in Paris and taking a day trip to the Champagne country, or Chartres for your get-away. There is enough to see and do to fill several months.

Chiming in on the day trip advice - I really enjoyed Chartres for the cathedral and smaller-town experience. I took it as a day trip from Paris last August. I went on a Monday (the slow day as many shops are closed) and got an amazing tour with Ann (I think is her name) that RS mentions in his guidebook.

When traveling to Italy, I preferred the small towns and absorbing the culture, cafe, good food and wine.
Back to France, probably 3 museum, 3 chateaux museum would be good. Now how to get to these place is what I don't know. Love champagne or wine so I would like to go to vineyards. I don't like driving, prefer the train. Im thinking 4 nights in Paris, then going to Normandy and Loire Valley.
I did have personal tour guide in Rome and loved it. Saves time.
