My family and I are going to be in Paris for 9 days in November. When I was a young man I did a trip around the Med and really fell in love with Eze. I want to take the family to see it and have always dreamed of staying in the hotels there. However I was surprised to see eze booked solid for that period of time and was curious, what is going on then?
Have you contacted hotels directly? Sometimes when they have only a few rooms left, they hold them off from not only listing services like Booking dot com, but also their own websites. I've run into this repeatedly in Switzerland, where the various websites, including the hotel's own, showed no rooms (or only rooms too large and expensive for me), but e-mailing got me the rooms I wanted.
That said, I'm as puzzled as you, as to why rooms should be hard to find in Eze in November (the very definition of "off season" in that area). Unless, that is, the hotels are closed precisely because it's off season.
Whether it's because they're booked or because they're closed, if you can't stay in Eze itself, you can always stay in Nice and day-trip in.

I liked Nice; there's lots to do there. But if you really want to stay in a small town, you could look at other places along the rail line (or with bus connections) to Eze. Menton felt a bit larger than Villefranche-sur-Mer and Beaulieu-sur-Mer, and thus perhaps less likely to be dead in November. Menton has a nice historic district and two well-regarded gardens that might still be attractive in late fall. The town has an unusually warm climate. There's also Antibes.
I did some deeper digging and it seem that the city, for the most part, shuts down. It's way off season and it seems that people take their vacations during that time. Thanks everyone for the alternative options. Looking at them now.
We have stayed in Nice twice, once for two weeks, and love it. If I wanted to stay in a smaller town, I would like Antibes, Villefrance, Beaulieu, and St-Jean Cap Ferat. I would never stay in Eze, rather go up there for dinner and the view. It is too remote for my taste to stay there.

If you do decide to make a day trip to Eze, be careful about what day of the week you plan to go. We were there last October 10 (a Monday) and most everything was closed - finally grabbed a light take-out snack at the bakery. The view was beautiful, however, we were disappointed with the lack of amenities for visitors.
I recommend Villefranche sur Mer and use the bus or train to see other sights along the coast, including Eze. It was a big confusing to use the bus from Villefranche to go to Eze, but search the bus company website; look for where the bus starts; that is where I got mixed up. I had trouble finding the start point of the bus to Eze in Nice after coming from Villefranche on a different bus. I will consider a cab to Eze next time to save the hassle. It was easy to take the bus from Eze back to Nice then on to Villefranche. I have used VRBO in Villefranche and stayed at the Hotel Darse with the RS tour; it might also close in November. I was on a late October tour and heard the hotel was closing soon after we all departed.
