We are booked on a 7 day Paris tour and would like to extend 1-2 day before and 2 days after the tour.
We would like to see Giverny and Normandy. We would also like to see Mont St-Michel if at all possible. We would like recommendations for tour agencies, bus trip etc. to these place. Thank you for all suggestions.

I would check out all the places you are interested in to see if they are easily reached by train. Years ago it was not easy to get from Paris to Mont St. Michel, but that may have changed. One place that is lovely and easily reached by a regional train from Montparnasse station is Chartes. I recommend you add it to your list of possibles. I would also Google on day tours from Paris to see what is available.

Easy DIY. Train from Paris St Lazare to Bayeux. Check with Overlord who runs Normandy Beach and Mount St Michel day tours. Stay in Bayeux - Overlord pick-up point is easy to find. Company is very good. Paris is a distance away - I wouldn't do day trips, base yourself in Bayeux.

If you aren't comfortable with DIY for Giverny, if your hotel has a concierge, contact them to see if they can recommend a bus tour from Paris. I know there are a number, but have no personal experience with them. You could also check Viator and reviews of the tour providers. I like to book directly with the provider rather than Viator (or TripAdvisor).

You didn’t give dates for your Paris tour but Monet’s Garden is not open year round. Generally it is open from the beginning of April through October so that might make a difference to your planning.
