We found a fantastic restaurant in Chartes, “Le Moulin de Ponceau.” They do a tasting menu with wine pairings that is incredible. You will walk by then during your morning walk. They are down the stairs and across the bridge perched riverside. You’ll be amazed at the combinations of flavors and textures. If you’re from the Seattle are and ever experienced Rover’s, it’s that sort of dining.
I went there in February last year and I absolutely agree with your assessment: a great restaurant indeed! Chartres has plenty of good dining opportunities.
Le Moulin de Ponceau is a fantastic choice- though I liked it better 10 years ago with the other owners.
Café Bleu is also wonderful...Le Boeuf Couronné...among others
