Eating in Collioure and Cadaque?

I imagine you need some fish after your trip to the Dordogne...

Collioure is nice to visit, provided you can find a parking space, but since I read that you found Sarlat very touristy, if you prefer an authentic local atmosphere rather than the touristy restaurants of Collioure, this village that is crowded with tourists almost all year round), check out Port-Vendres, a fishing port 10 minutes' drive from Collioure on the way to the French-Spanish border, the road is scenic.

The fishermen come to the docks in the morning to sell their catch.

I go to buy fish from the fishermen when I'm in that area (and have a drink along the docks). I think I can recommend these two restaurants:

I there a way to walk between them?

There's no way to walk along the coast between Collioure and Port-Vendres; it's all cliffs. And definitely don't walk on the road.
But there are several possible hiking trails, including one that goes inland from Collioure to Port-Vendres (about 1 hour's walk)

There's a bus that runs along the coast, bus 540. You'll find its schedule here:
