I need some help with options to make a flight to Madrid from CDG airport at 7am 31 Dec.. We are staying near the Arc de Triomphe were the Le Bus leaves for CDG. The earliest bus is 5.10. Will this make the 7am flight or what are some other alternatives and their cost.

you said we so take a taxi (all hotels can arrange this for you the night before if you have phone trouble) and split the cost about 55 euros. or stay at the Ibis Hotel right at the airport near terminal 2 the night before
You should be at the airport by not much later than 05h00. The fixed taxi charge is 50€ plus a 7€ reservation fee if you call the night before to arrange pickup (and I definitely would). A 04h20 pickup should work well.

I use Snapcar for runs to the airport. Unlike the VTCs (Uber, Chauffeur Privé, or Taxify), Snapcar allows you to arrange in advance for pickup and there is no reservation fee. Sometimes Snapcar is 5€ less than the official taxi rate.
I had an early flight to Budapest from CDG and needed to be at the airport by 7 am on a Sunday so just took a taxi a bit past 6 am--not worth the hassle of taking a bus and worrying about getting there with enough time to spare.
The other alternative is to stay at one of the hotels right at the airport. That’s our preference. You have to pay for a night at a hotel, anyway; and by the time you spend the money for a taxi, you are likely to be in the price range of those. The Sheraton is right in T2, and there is a group of several others just outside the last stop (T3) of the shuttle.
We recently did what I described; took the rer from Gare du Nord, and had a relaxed night. Even though we were checking out in the morning before the breakfast was available, the Sheraton had coffee and croissants ready for early departers.
You won’t need to go through passport control (Schengen to Schengen), but there will still be check in and security. It would be foolish to underestimate the amount of time it takes to make your way through that gigantic airport.
