Not sure we want to stop in Sarlat area; does it make sense to drive through from Amboise to Carcasonne? We're sort of following the Kamikaze itinerary to Nice.

It's a long 600-kilometer drive from Amboise to Carcassonne, but most of it on autoroutes so you could do it in a day. Sarlat could be a lunch stop if you want to see the place, but you wouldn't have time for much. Alternatively, you could look for vertical Rocamadour to the east of the autoroute, or maybe Cahors further south with its medieval bridge and cloister.
Whether and how long you want to stop in the Dordogne-Lot region depends on your time and priorities. We loved the area (more than Carcassonne) but you may prefer the walled medieval city to a bunch of separate castles in a beautiful valley.
