Driving from Caunes Minervois to Sete, what to see along the way

Hi All, we'll be staying in Caunes Minervois after seeing Carcassonne and then driving to Sete to stay the next night, looks like lots of wineries along the way, both Narbonne and Bezier look like interesting stops to explore very old architecture. Does anyone have thoughts or preferences, or am I missing another town on the way that's a must see. Love the idea of a less touristy feel. We will be continuing on to Saint Remy for three nights, and then a night in Nice.

I would favor Narbonne over Béziers (Béziers is quite run-down unfortunately), and I would also stop by the Abbaye de Fontfroide, a beautiful abbey near Narbonne. From Narbonne to Sète, take the toll highway; the old road is slow and not very scenic.
