There are many possibilites.
For a relatively quick stop, not far from the A8 highway, I wholeheartedly recommend stopping by the Le Thoronet abbey.
Do not leave anything visible in the car and take valuables with you, as the parking lot is in the middle of nowhere.
Another quick option is St Maximin La Sainte Baume for the Basilica.
